I shared a little insta-story at the weekend of how I made my apple sponge and I’ve had lots of requests for the recipe, so I’m popping it here for anybody that’s interested. It’s so simple and never fails to please.
Firstly you need to stew your apples, I have about 6 large ones in this pot, and in my humble opinion you can never have to many apples!
Once the apples are stewed leave them to cool and crack on with the sponge topping – I love a gadget so I use my trusty food mixer but a wooden spoon will do the same job and give you arms of steel at the same time – win win!
So in here I have:
4oz Caster Sugar
4oz Self Raising Flour
1tsp Baking Powder
Mix until combined – and then it’s time to pour onto the cooled apples.
I used the pot I stewed my apples in to cook the sponge – if you don’t have a cast iron saucepan you can transfer it to a baking dish, this way just saves on the washing up!
Now you just need to pop it in the oven at at 180c or Gas Mark 4 for approximately 30mins or until a skewer comes out clean and it’s tuned a lovely golden brown colour.
Once it’s out of the over the only question that’s left is, custard or ice-cream. For me it has to be lashings of real custard on warm sponge, the perfect end to a Sunday Roast.
