Homemade Granola

We love granola in this house, but I find the shop bought ones are either too sweet or contain a lot of things that we aren’t so keen on, so the solution was to starting making my own and it’s so easy, so I decided to share my recipe with you all.

In a large mixing bowl start with:

250g rolled oats

250g mixed nuts (I normally buy Lidl’s own)

1/2 cup seed mix

1/2 cup chia seeds

Cinnamon to taste

1/2 tsp salt

Give all that a good mix together and now your ready to go in with your liquid. I like to use 1/2 honey and 1/2 maple syrup but you can use whatever you like, all honey, all maple or even agave syrup just whatever you have.

I here I’ve used 100mls honey, 100mls of maple syrup & 2 tbsps olive oil. Give it all a good mix and if it looks a little dry add some more liquid just be careful you don’t want too much.

Pour the mixture onto a lined baking tray, I like to use these Seraphine’s Kitchen reusable liners from Do Your Bit NI. Whatever you do don’t forget to line or grease the tray. Bake at Gas Mark 3/160 degrees for 30 minutes until toasted, but not burned stirring regularly.

When it’s cooked, tip it into a clean mixing bowl and leave it to cook before adding your choice of dried fruit. Personally we go for raisins & sultanas with a smidge of coconut flakes.

Store in an airtight container and it will keep for approximately 2 weeks. You can enjoy it on its own or as a topping for yogurt or porridge.
